Spiced-up (leftover) rice


  • 1 egg
  • leftover rice
  • handful of spinach
  • around 10 sticks bean sprouts
  • 1 chopped preserved long spinach (optional, you can use 3-4 drops of lemon juice)
  • 1/2 chopped onion
  • 1 chopped red chilly pepper
  • 1 tablespoon red pepper paste
  • 1 tablespoon sesame oil
  • 1 teaspoon light soy sauce
  • 1/2 teaspoon dark soy sauce
  • salt to taste


Heat pan and add half tablespoon sesame oil. Put egg and make it sunny side-up. When done set aside. Mix rice, onion and bean sprouts in a bowl. Microwave for 1 minute.  Add red pepper paste, dark and light soy sauces, chilly pepper in the rice and preserved spinach. Mix well. Add spinach. Sprinkle salt and mix swiftly and carefully. Sprinkle remaining sesame oil. Add the sunny side up egg. Enjoy!

  1. This sounds so great. My wife loves Asian food, though she is Mexican and I love Mexican food. We like going to Saim’s her in Boise. She like Pat Ti. Anyhow I am not going to wait for lefter over rice. I am making some white rice and say it’s left over and what’d I do oh ya make some of Eatgoodblog’s Spiced-up (leftover) Rice.
