Scotch egg

Ingredients

(for 2 scotch eggs)

  • 3 eggs
  • 2 fresh sausages 
  • 1/2 cup all purpose flour
  • 1/2 cup bread crumbs (can use finely crushed corn flakes too)
  • sufficient oil for frying

Method

Bring 2 eggs to boil hard. When done, peel the cracks and leave it to chill. Make a batter mixing 1 egg, flour and water. Peel the skin of the sausage and flatten to round or oval shape. The wrap the boiled egg around it. Dip it in a batter and coat all the parts. Then dip and roll into the breadcrumbs. Heat oil in high, put scotch eggs in it. Bring the heat down and deep fry until it gets golden brown color. However, the sausage wrap might still be uncooked, so just to make sure that it is cooked, place the eggs in pre-heated oven for around 8-10 minutes.
